The prestigious history of the Assier family in Martinique begins in 1710 when Jean Assier, a young lawyer from Montpellier, arrived on the island and served at the Phélypeaux governorship. Several centuries later, his direct descendant, Yves Assier de Pompignan, undertook a bold and passionate project: to create a new distillery embodying the authentic history and richness of the Caribbean terroir. Thanks to the acquisition of the Habitation du Simon, ideally located in the heart of an exceptional terroir, and his passion for Martinique and its natural treasures, Yves Assier de Pompignan dedicated many years to building a rum brand combining ancestral tradition and modern innovation.
In 2010, the official launch of the project began with the rigorous selection of the best aged rums intended for blending. A maturation cellar equipped with barrels previously used for Cognac, as well as an analysis laboratory, were set up at the Habitation. The first selections, aged 6 to 11 years, were then refined in 320-liter French oak barrels to extend their maturity. At the same time, the search for a distillation method that was both innovative and respectful of traditional know-how led Yves Assier to choose a copper Charentais still, complemented by a seven-plate column. Temperature-controlled fermentation tanks promote long fermentations, allowing the full aromatic richness of the cane musts to be extracted. After a long administrative process, authorization to open the agricultural rum distillery was obtained on December 31, 2015. Work then began in an 18th-century former sugar purging house located at the heart of the estate to create a distillery respectful of traditions and terroir. After 10 years of learning and experimentation, the brand new A1710 distillery was inaugurated in December 2016 at the Habitation by Yves Assier de Pompignan and his dedicated team.
The A1710 rums are cultivated and produced according to rigorous organic methods, using sugar canes from a plot free of chemical fertilizers, pesticides, herbicides, or any synthetic products. This plot is planted directly on site with two rare and emblematic cane varieties: Canne Bleue and Canne Violette, which give the rums a unique character and aromatic finesse.
Bête à Feu is an exceptional white agricultural rum, distilled only from fresh canes, pressed once to preserve all their authenticity. The distillation is done in a copper still equipped with a 7-plate column, ensuring optimal quality and complex aromas. The rum is then slowly reduced to 50.9% alcohol to reveal all its power and aromatic intensity.
