The birth of JM rums begins in the heart of lush vegetation, where one of the most prestigious distilleries is located, the Fonds-Préville estate, situated in Macouba, Martinique. The first distillations date back to 1845, initiated by Jean-Marie Martin, whose initials "JM" mark each bottle and symbolize a tradition of excellence. At the beginning of the 20th century, in 1912, the distillery was taken over by Ernest Crassous de Médeuil and his brother Gustave, then manager and owner of the Bellevue estate. After several major improvements and optimization works, the two estates merged to form the great Habitation Fonds-Préville. Today, the Bernard Hayot Group is the majority shareholder, via the SCA Héritiers Crassous de Médeuil, thus guaranteeing unique know-how and exceptional consistency in production.
The sugar canes are carefully cultivated on the exclusive Fonds-Préville domain, which extends over 225 hectares, ensuring the best possible quality of the raw material. This exceptional terroir is located on the emblematic slopes of Montagne Pelée, benefiting from a climate and soil conducive to the cultivation of canes rich in aromas. The juices, called vesou, from these aromatic canes are fermented according to a traditional process, then precisely distilled in two copper Creole columns, typical of Martinique, up to a maximum alcohol degree of 72°. This artisanal method preserves all the unique aromatic richness of the sugar cane. Moreover, the distillery is supplied by the pure and crystalline waters of the Montagne Pelée springs, contributing to the finesse and purity of the rum.
