The prestigious history of JM rums begins in the heart of lush vegetation, within one of the most beautiful distilleries located at Habitation Fonds-Préville, in Macouba, Martinique. The first distillations were carried out in 1845 under the visionary initiative of Jean-Marie Martin, who stamped his initials "JM" on his rums, thus marking the birth of a legend. In 1912, the distillery was taken over by Ernest Crassous de Médeuil and his brother Gustave, managers and owners of Habitation Bellevue. Following significant improvement works, these two estates merged to become the emblematic Habitation Fonds-Préville. Today, the Bernard Hayot Group holds the majority of shares in SCA Héritiers Crassous de Médeuil, ensuring the continuity and excellence of this great house.
The sugar canes cultivated on the exceptional Fonds-Préville estate, which extends over 225 hectares, benefit from a unique terroir on the fertile slopes of Montagne Pelée. This volcanic microclimate gives the canes an unparalleled aromatic richness. The fermented juices are carefully distilled in two traditional Creole copper columns, up to a maximum of 72°, to preserve all the authenticity and aromatic complexity intrinsic to sugar cane. Moreover, the distillery is powered exclusively by the crystalline spring waters from Montagne Pelée, guaranteeing the purity of each distillation.
Aged between 4 and 5 years in the magnificent climate-controlled cellars of the distillery, the VSOP asserts itself as the big brother of the VO. This extended aging of two additional years brings a deeper aromatic complexity, with rich and refined notes. This aging is done entirely in Bourbon barrels, giving the rum an elegant texture, vanilla and woody aromas, as well as a perfect balance between strength and softness.
