The Depaz distillery was born in the heart of the La Montagne estate, located in Saint-Pierre, at the foot of the majestic Montagne Pelée. Founded in 1651 under the initiative of Jacques Duparquet, the first governor of the island of Martinique, this distillery embodies a rich historical and cultural heritage. It pays tribute to Victor Depaz, whose family was a key player in local rum production until the tragedy of 1902, when the devastating eruption of Montagne Pelée destroyed Saint-Pierre, sparing only Victor, then a student in Bordeaux. Orphaned by this catastrophe, he returned fifteen years later to rebuild the Habitation Périnelle of his childhood identically, bringing this exceptional estate back to life. Very quickly, the Depaz distillery established itself on the international scene thanks to the remarkable quality of its rums, produced from sugarcane grown on particularly fertile volcanic soil and irrigated by water of rare purity. Rooted in tradition, this distillery is among the smallest and most authentic in Martinique, with a production core still driven by an old traditional steam engine.
This Port Cask Finish (Porto) represents one of the flagship novelties of the Depaz House and is part of the prestigious "Les Finish Martinique" collection. After an initial aging of 8 years in classic oak barrels, this exceptional rum was refined for 11 months in Port casks, giving its aromatic profile a gourmand and complex bouquet, marked by subtle fruity and sweet notes. This unique Port cask finishing process enhances this aged rum, offering a refined and balanced tasting experience, ideal for passionate lovers of exceptional rums.
