Nestled on the verdant slopes of Mount Pelée in northern Martinique , Habitation Bellevue benefits from a humid tropical climate and exceptionally rich volcanic soils. This unique terroir provides ideal conditions for growing sugar cane of rare quality. Since 1914, when Gustave Crassous de Médeuil acquired the JM rum distillery, the family has passionately watched over the legacy of this iconic house. Their high standards are reflected in every stage of production.
The sugar cane is harvested and crushed in less than an hour, guaranteeing a remarkably fresh, intensely aromatic juice. A rare occurrence, JM uses exclusively spring water directly from Mount Pelée, naturally rich in minerals, which gives its rums a unique purity and structure. Distillation takes place in two copper Creole columns , perpetuating traditional know-how. Aging takes place in carefully selected American oak barrels, toasted according to two intensities (intense and extreme) to reveal all the aromatic complexity of the rum. Precise topping up, carried out with rums of the same age, allows us to preserve the balance and typicity of each batch.
