RHUM JM - Canopée Cuvée - 46%
Located in the heart of northern Martinique, on the majestic slopes of Mount Pelée, Habitation Bellevue benefits from a unique terroir. This humid tropical climate combined with exceptionally fertile volcanic soils creates ideal conditions for cultivating exceptional sugarcane, guaranteeing an agricultural rum of unparalleled quality. In 1914, Gustave Crassous de Médeuil acquired the J.M Rum Distillery from the founding family of Jean-Marie Martin. For over a century, the heirs Crassous de Médeuil have passionately and rigorously upheld the artisanal tradition that has made Rhum J.M renowned.
The sugarcanes, rigorously selected and cultivated using sustainable methods, are pressed in mills less than an hour after harvest. This speed ensures cane juice of incomparable freshness and concentrated natural aromas. The J.M distillery stands out among the few in Martinique to draw its water directly from the source, coming from the slopes of Mount Pelée; this pure and mineralized water plays a crucial role in the finesse and aromatic complexity of the rums produced. The distillation, carried out according to traditional know-how, takes place in two Creole-style copper columns, allowing the full expressive richness of the juice to be extracted. The oak barrels, carefully selected and previously charred, bring depth and elegance to the aging rums. Each year, the cellar master performs a meticulous topping up of the barrels with rums of the same age to preserve the typicity and aromatic harmony unique to each vintage.
The Canopée cuvée reveals itself as a refined blend of aged rums, aging for 6 years in barrels, offering a perfect balance between aromatic richness, roundness, and complexity. A must-have for lovers of exceptional rums.
