The Clairins represent the excellence of artisan Haitian rums, where more than 532 small traditional distilleries dot the Caribbean island famous for its historic rebellion against slavery in 1804. This unique nation still preserves pure ancestral production methods: exclusive use of native, non-hybrid sugarcane varieties, 100% natural cultivation without pesticides or chemicals, spontaneous fermentation without added industrial yeasts, and archaic artisanal distillation carried out in unfiltered stills.
Sugarcane cultivation in Haiti is done in intercropping with other plant species such as banana and mango, thus promoting ecological and sustainable agriculture. The cane is left to grow without chemical intervention for a long period of 18 months before manual harvesting. The cutting is done artisanally with a machete, then the stalks are transported to the distillery on ox-drawn carts, reflecting a preserved traditional know-how. Once at the distillery, the canes are pressed between long rollers; the juice flows into stone containers, while a human chain organizes the transport of fibers to a natural drying area.
To claim the prestigious "Triple A" designation, the manufacturing process must comply with a strict specification: a minimum fermentation of 120 hours, distillation limited to 5 copper stills heated by direct fire, and bottling carried out immediately upon leaving the still, exclusively in Haiti. This commitment guarantees quality, authentic taste, and exemplary traceability.
