RHUM A1710 - La Perle Fine - 2022 Edition - 67.5%
The prestigious history of the Assier family in Martinique begins in 1710 when Jean Assier, a young lawyer from Montpellier, arrived on the island to serve under the Governor of Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, embarked on an exceptional adventure: the creation of a unique rum distillery that embodies both the rich history and the exceptional terroir of the Antilles. Thanks to the acquisition of the Habitation du Simon, ideally nestled in the heart of an exceptional terroir, as well as Yves Assier de Pompignan's unwavering passion for Martinique and its natural treasures, he fully dedicated himself to designing a rum brand that skillfully blends ancestral tradition and modern innovation.
In 2010, this ambitious project took shape with the launch of a rigorous selection of great aged rums intended for sublime blends. A maturation cellar was installed, equipped with barrels that previously contained Cognac, as well as a quality control laboratory at the Habitation. The first selections, aged from 6 to 11 years, were carefully re-stocked for optimal aging in 320-liter French oak barrels. At the same time, the search for an innovative distillation method respectful of local traditions led Yves Assier to invest in a fully copper Charentais still, complemented by a seven-plate column. Temperature-controlled fermentation tanks promote long fermentations, allowing maximum aromatic extraction from the cane juices. After meticulous administrative procedures, the distillery obtained its opening authorization on December 31, 2015, for the production of Agricultural Rums. Work then began in an 18th-century former sugar purging house located at the heart of the estate. In December 2016, after ten years of learning and refinement, the A1710 distillery was proudly inaugurated by Yves Assier de Pompignan and his team.
A1710 Rums are produced according to a strict organic process, with sugarcane grown without any fertilizers, pesticides, herbicides, or chemicals, on a dedicated plot. Two emblematic varieties grow there: the Blue Cane and the Purple Cane, true botanical jewels of the Martinican terroir.
La Perle Fine is the result of a meticulous double distillation from fresh cane juice manually harvested in the exceptional plots of Madame Joseph Sylvestre, Monsieur Paul Octave de Ducos, and Saint-Esprit. Each cane is carefully hand-cut and pressed only once to guarantee the purity of the vesou. The long fermentation, lasting between 5 and 7 days, precedes the double distillation spaced several days apart, ensuring finesse and aromatic complexity. This exceptional rum is bottled at its remarkable natural strength of 67.5%, revealing all its power and authenticity.
