The Depaz Distillery is located in Martinique, on the majestic slopes of Mount Pelée, in the north of the island, a region renowned for the exceptional quality of its agricultural rums. Originally, these fertile lands were used for growing tobacco, indigo, and livestock farming. Quickly, Victor Depaz directed their wealth towards sugarcane cultivation, a sector that experienced considerable growth thanks to innovation and improvements in local distillation techniques. However, on May 8, 1902, Mount Pelée erupted and completely destroyed the town of Saint-Pierre. Victor Depaz, then a student in Bordeaux, learned of this disaster that took his entire family. Orphaned and ruined, he emigrated to Canada, but a stopover in Martinique marked a turning point: he decided to return to Habitation Périnelle, his birthplace in Saint-Pierre. On May 8, 1917, fifteen years after the devastating eruption, he restarted his distillery, now supplied by 521 hectares of sugarcane located on the fertile slopes of Mount Pelée. Victor Depaz also built a sumptuous family home, a replica of the Habitation Périnelle where he grew up, soon nicknamed Château Depaz, where he settled in 1922 with his wife and eleven children. In the 1950s, his sons, André and Raoul Depaz, took over and modernized both sugarcane production and the operation of the distillery, now renowned as the Depaz distillery, a jewel of Martinican heritage.
Despite its modest size, the Depaz distillery is one of the most authentic and tradition-respecting in Martinique. It still operates today thanks to an old steam engine, the true beating heart of the operation. This emblematic machine generates the steam necessary to activate the sugarcane crushing mills as well as the distillation columns, thus preserving an ancestral know-how that guarantees the richness and aromatic complexity of Depaz rums.
This aged agricultural rum, without an age statement, is exceptional because it comes from a single cask (#620) made of French oak, known to bring finesse and depth. Put into cask on June 15, 2011, it benefited from a long aging of 11 years in careful maturation that enhances its powerful and elegant aromas. The edition is limited to only 692 bottles, making this prestigious rum a rare treasure sought after by demanding enthusiasts and collectors.
