The Saint-James Distillery, an iconic jewel of Martinique, has a rich history rooted in tradition and artisanal mastery. Founded by Reverend Edmond Lefébure, former Superior Father at the Brothers of Charity convent and passionate about chemistry, the distillery was born from his visionary intuition to exploit the exceptional potential of cane spirits near his hospital. Since its beginnings, Saint James has continuously embodied excellence in the production of traditional agricultural rums. In 1973, under the impetus of the Cointreau house, all production was centralized in Sainte-Marie, the historic heart of Martinique's sugar cane industry. In 2003, La Martiniquaise took over the distillery, ensuring harmonious development and consistent quality, reflecting a precious know-how recognized worldwide.
Saint James rum is crafted using the traditional Creole column method, through fermentation and distillation of pure sugar cane juice. This ancestral technique, certified and protected by the A.O.C. Rhum de la Martinique, gives Saint James rums a rich and complex aromatic palette, perfectly suited for aging in oak barrels. Guaranteeing uncompromising authenticity, no additives or sweeteners are ever added, thus respecting the pure integrity of agricultural rum. The distillery also follows an ambitious ecological approach: cultivating its cane nearby to limit CO2 emissions, using bagasse as renewable fuel to power its columns and mills, and transforming distillation residues (vinasse) into irrigation water for its plantations. This model of sustainable economy makes Saint James a responsible player, committed to preserving the environment and the longevity of its exceptional terroir.
