The emblematic history of the Assier family in Martinique dates back to 1710, when a young lawyer from Montpellier, Jean Assier, arrived on the island to serve under the Governor of Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, initiated a bold and exciting project: the creation of a unique new rum distillery embodying both the rich history and exceptional diversity of the Caribbean terroir. The acquisition of the Habitation du Simon, ideally located in the heart of a remarkable terroir, combined with Yves Assier's unwavering passion for his island and its natural treasures, has allowed the building over the years of a rum brand brilliantly combining ancestral tradition and modern innovation.
In 2010, the project officially began with a meticulous selection of fine aged rums intended for blending. A maturation cellar equipped with barrels formerly used for Cognac was installed at the Habitation, along with a quality control laboratory. The first selections of rums, aged then between 6 and 11 years, were returned to maturation in 320-liter French oak barrels, ensuring optimal refinement. At the same time, Yves Assier chose a distillation process combining quality and tradition by selecting a copper Charentais pot still paired with a seven-plate column. Fermentation tanks with controlled temperature allow long fermentations, essential for developing sugarcane wines with powerful and complex aromas. After rigorous administrative procedures, authorization to open an Agricultural Rum distillery was obtained on December 31, 2015. The distillery, set up in an 18th-century former sugar purging house at the heart of the estate, then came into being. In December 2016, after 10 years of learning and research, the A1710 distillery was officially inaugurated by Yves Assier de Pompignan and his team.
A1710 Rums are produced according to strict organic methods, from sugarcane grown without chemical fertilizers, pesticides, herbicides, or any agrochemical treatment. These exclusive plots located on the estate harbor two specific varieties: the "Blue Cane" and the "Purple Cane", typical of the Martinique terroir, which give the rums a unique and authentic aromatic signature.
La Perle Fine benefits from a slow and thorough double distillation made from freshly hand-crushed cane juice, sourced from the plots of Madame Joseph Sylvestre and Monsieur Paul Octave located in Ducos and Saint-Esprit. The canes are harvested manually and pressed only once to preserve all their aromatic richness. The fermentation, lasting between 5 and 7 days, promotes the revelation of the complex aromas of the vesou. The distillation is carried out in two stages, separated by several days, to optimize the purity and finesse of the rum. This exceptional rum is presented at its very powerful natural strength of 67.5%, offering an intense and refined tasting experience.
