The emblematic Plantation of Trois Rivières represents an essential part of the rich historical and cultural heritage of Martinique. Founded in 1660, when Nicolas Fouquet, superintendent of King Louis XIV, acquired 2,000 hectares of land located in the south of the island, this plantation is a living testimony to the sugar and rum history of the Antilles. In 1785, Etienne Isaïe Marraud Des Grottes, an influential landowner from the north of the island, acquired the Trois Rivières parcels and launched the production of agricultural rum alongside the traditional sugar manufacturing. Throughout the 18th and 19th centuries, the plantation specialized in sugar refining; then, at the beginning of the 20th century, it inaugurated the exclusive production of agricultural rum, a production that would become its primary vocation from 1940. In 1994, the Trois Rivières distillery was integrated into the B.B.S. group, also owner of the renowned La Mauny rums. Two years later, Trois Rivières was awarded the prestigious AOC label (Appellation d’Origine Contrôlée Martiniquaise), making it the only rum in the world to enjoy this recognition of excellence and authenticity. Its name comes from the three rivers that irrigate its vast sugarcane fields: Oman, Bois d’Inde, and Saint Pierre.
The rum production begins with the careful harvesting of sugarcane in February, when their sucrose content is optimal. The canes are cut and crushed within less than 24 hours to preserve all the aromatic richness of the juice. The vesou, or cane juice, is then transferred into open fermentation vats where it ferments for 24 to 30 hours, thanks to the meticulous action of natural yeasts. This process transforms the juice into cane wine before its distillation in a traditional Creole column still. The rums then age for at least 3 years in French oak barrels of controlled volume, never exceeding 650 liters, to guarantee perfect maturation and unique aromatic complexity.
