Located in the north of Martinique, in the heart of the rich agricultural terroirs on the slopes of Mount Pelée, Habitation Bellevue benefits from a unique humid tropical microclimate and particularly fertile volcanic soils. These exceptional conditions favor the cultivation of an exceptional sugar cane, recognized for its quality and unparalleled aromatic potential. In 1914, Gustave Crassous de Médeuil acquired the prestigious J.M Rum Distillery from the founding family of Jean-Marie Martin. For over a century, the heirs Crassous de Médeuil have perpetuated this tradition and passionately oversee the artisanal production of Rhum J.M, a symbol of Martinican excellence.
The sugar canes, meticulously cultivated and rigorously selected, are crushed within less than an hour after harvest, thus guaranteeing an exceptionally fresh cane juice rich in natural aromas. J.M is one of the few distilleries in Martinique to incorporate in its production process a pure and mineralized spring water sourced directly from Mount Pelée, enhancing the finesse and balance of its rums. Traditional distillation is carried out in two Creole-style copper columns, an ancestral know-how that gives J.M rums their unique aromatic identity. The oak barrels, carefully selected and previously charred, receive the rum for exceptional aging. Each year, the cellar master performs a meticulous topping up with rums of the same age to maintain the typicity and aromatic richness specific to each vintage.
