Located in the heart of northern Martinique, on the fertile volcanic slopes of the majestic Montagne Pelée, Habitation Bellevue benefits from an ideal humid tropical climate that gives the local sugarcane exceptional qualities. In 1914, Gustave Crassous de Médeuil acquired the renowned Rhumerie J.M from the family of Jean-Marie Martin. For over a century, the descendants of Crassous de Médeuil have passionately and rigorously continued the artisanal production of J.M rums, essential references of Martinican agricole rum.
The sugarcanes, rigorously cultivated and selected at optimal maturity, are pressed in traditional mills less than an hour after harvest. This speed guarantees an incomparable freshness of cane juice, offering an intense and authentic aromatic richness. J.M also stands out as one of the few distilleries in Martinique to use exclusively pure spring water, extracted directly from Montagne Pelée. This naturally mineralized water plays an essential role in the unique character and finesse of J.M rums. Distillation is carefully carried out in two traditional Creole copper columns, thus preserving the natural aromas and quality of the distillate. To age and refine their rums, carefully selected and previously charred barrels are used, ensuring the harmonious development of flavors. Each year, the cellar master performs a rigorous topping up of the barrels with rums of the same age to maintain the typicity and specific balance of each vintage.
Jardin Macouba is a rare and precious white rum, made from the distillate of long fermentation vats, produced from the 2019 harvest. This rum represents the pure and vibrant expression of Martinique sugarcane, offering a powerful, fresh, and richly aromatic tasting experience.
