The Domaine Roulot is located in Meursault, in the heart of the prestigious Côte de Beaune in Burgundy, a region worldwide renowned for its exceptional wines. Owned by Jean-Marc Roulot and his sister Michèle Javouhey Roulot, this family estate continues an ancestral tradition combining viticulture and distillation. In addition to its exceptional wines, the estate produces artisanal eaux-de-vie and organic fruit liqueurs, reflecting a unique know-how passed down since the mid-19th century. The copper still used today for distillation once belonged to Jean-Marc's grandfather and then his father, who were itinerant distillers, highlighting an intact family passion for distillation. Initially focused on Burgundy pomace, distillation has diversified to now offer a refined range consisting of two eaux-de-vie and one liqueur. The estate has been certified organic since 2013 and applies rigorous biodynamic practices, although not certified, thus guaranteeing environmentally respectful products of impeccable quality.
The lemon liqueur from Domaine Roulot is made exclusively from lemons grown organically in Sicily, a region known for the aromatic richness of its citrus fruits. Unlike most liqueurs which have a high sugar content, generally around 250 g\/L, Domaine Roulot has innovated by gradually reducing this to 175 g\/L, then to 140 g\/L today, to offer a perfect balance between sweetness and freshness. This subtle blend of a controlled alcohol level at 35% and a perfectly dosed sugar content makes this exceptional lemon liqueur renowned for being light, elegant, and perfectly suited to connoisseurs seeking authenticity and finesse.
