Domaine Roulot - Lemon Liqueur
The Domaine Roulot is located in Meursault, in the heart of the prestigious Côte de Beaune in Burgundy, a region world-renowned for the exceptional quality of its terroirs. Owned by Jean-Marc Roulot and his sister, Michèle Javouhey Roulot, this family estate combines tradition and passion in producing exceptional wines, as well as crafting artisan eaux-de-vie and organic fruit liqueurs. The distillation activity, deeply rooted in the family history, began in the mid-19th century thanks to a copper still passed down through generations – originally used by Jean-Marc Roulot's grandfather, then his father, both renowned itinerant distillers. The family tradition initially focused on distilling Burgundy pomace, but has since expanded to offer a refined range composed of two eaux-de-vie and a unique liqueur. The estate has been certified organic since 2013, and also applies environmentally respectful biodynamic practices, although these are not officially certified.
The lemon liqueur from Domaine Roulot is made from lemons sourced from rigorously selected organic agriculture in Sicily, guaranteeing a natural and fragrant product. Unlike most classic liqueurs which have a high sugar content, generally around 250 g/L, the estate has carefully reduced this to 175 g/L and now to only 140 g/L. This subtle balance between optimized alcohol content and controlled sweetness gives this liqueur remarkable freshness and growing renown among fine spirits enthusiasts. The care given at every stage, from selecting organic fruits to artisanal distillation in traditional copper stills, makes this lemon liqueur a must-have for connoisseurs seeking authenticity and quality.
