The Saint-James Distillery, a true emblem of Martinican heritage, is located in the heart of Martinique. Its fascinating history begins with Reverend Edmond Lefébure, Superior Father at the Brothers of Charity convent and passionate chemist, who early on recognized the exceptional potential of spirits made from local sugarcane. Driven by this vision, he started producing artisanal rum near his hospital. The adventure continued, and in 1973, the Cointreau company took over Saint-James Rums, centralizing production in Sainte-Marie. In 2003, the distillery was acquired by La Martiniquaise, its current owner, further enhancing its international reputation.
Saint James rum is made from the careful fermentation followed by distillation in a Creole column of pure sugarcane juice. This traditional method, recognized by the A.O.C. rum of Martinique, gives Saint James rums a rich and complex aromatic palette, ideal for aging in oak barrels that enhances their unique flavors. Proud of an impeccable ethic, the distillery refuses any addition of sweeteners, ensuring unmatched purity and authenticity. Committed to a sustainable and responsible approach, the distillery significantly limits its environmental impact: sugarcane fields planted nearby reduce transport and CO2 emissions, while bagasse, a plant residue, is used as fuel to power boilers and generate electricity via a turbo-alternator. Furthermore, vinasse from distillation is treated to produce quality water used for ecological irrigation of the plantations.
