The Depaz Distillery is proudly located in Martinique, nestled on the majestic slopes of the Montagne Pelée, in the northern part of the island. Originally dedicated to the cultivation of tobacco, indigo, and livestock farming, these lands were quickly redirected by Victor Depaz towards the intensive cultivation of sugar cane. This agricultural shift was accompanied by real technical progress in distillation, boosting the quality and reputation of the rums produced. On May 8, 1902, Montagne Pelée erupted and completely devastated the town of Saint-Pierre. Victor Depaz, then a student in Bordeaux, learned of this catastrophe, which tragically meant the loss of his entire family. Orphaned and ruined, he exiled himself to Canada. However, during a stopover in Martinique, his attachment to his homeland led him to return and settle in Saint-Pierre, precisely on the Habitation Périnelle, his birthplace. On May 8, 1917, fifteen years after the eruption, he inaugurated a brand new distillery, supplied by his 521 hectares of sugar cane plantations located on the fertile slopes of Montagne Pelée. He built a family home, an exact replica of the Habitation Périnelle where he grew up, which quickly became the majestic Château Depaz, where he settled in 1922 with his wife and their eleven children. During the 1950s, the heirs André and Raoul Depaz took over, modernizing sugar cane production and optimizing the distillery, now officially known as the Depaz distillery.
Today, the Depaz distillery is one of the smallest and most authentic rum production units in Martinique. True to its heritage, it continues to operate thanks to an old vintage steam engine, the true beating heart of the distillery. This machine provides the steam necessary to power the mills crushing the sugar cane as well as to feed the distillation columns. This traditional process gives Depaz rums exceptional quality and a unique character, sought after by the most demanding connoisseurs.
The Cuvée de la Montagne is made exclusively from the distillation of pure cane juice harvested at the foot of the Montagne Pelée. This very high-quality white rum is bottled at 55% alcohol, revealing an intense aromatic power and remarkable purity, emblematic of the Martinican terroir.
