The Depaz Distillery is located in Martinique, on the lush slopes of the famous Montagne Pelée, in the north of the island. Originally, these lands were intended for tobacco, indigo cultivation, and livestock farming before Victor Depaz decided to dedicate them to intensive sugar cane cultivation, a sector that quickly developed thanks to major advances in artisanal distillation techniques. On May 8, 1902, the violent awakening of the Montagne Pelée volcano led to the total destruction of the town of Saint-Pierre. Victor Depaz, then a student in Bordeaux, learned with horror of the tragic loss of his entire family. Orphaned and ruined, he initially exiled himself to Canada. However, during a stopover in Martinique, he chose to return to his native lands, to the Périnelle estate where he was born. On May 8, 1917, exactly 15 years after the eruption, he restarted distillation with a new distillery powered by his 521 hectares of sugar cane planted on the majestic slopes of Montagne Pelée. Victor Depaz then built a sumptuous family home, an exact reproduction of the Périnelle Estate of his childhood, quickly called Château Depaz. He settled there with his wife and eleven children in 1922. During the 1950s, Victor's sons, André and Raoul Depaz, took over and modernized sugar cane production while improving the distillery, now globally recognized under the name Depaz Distillery.
The Depaz distillery is one of the smallest but also one of the most prestigious production units in Martinique. True to its traditions, it still operates today thanks to a unique old steam engine, the true heart of its process. This machine provides the essential steam to power the mills used to crush the cane, as well as the distillation columns, ensuring unmatched quality and authenticity at every stage of production.
This exclusive special edition in a decanter is the result of a meticulous blend of exceptional rums from the 2001 and 2004 vintages, carefully aged for a minimum of 10 years in prestigious oak barrels. This extended aging gives this XO rum a rare aromatic complexity, subtly blending woody, spicy, and fruity notes, making this unique cuvée a must-have for discerning connoisseurs and demanding collectors.
