The Clairins represent the artisan rums of Haiti, a unique Caribbean island known for its historic rebellion against slavery in 1804. With 532 artisanal micro-distilleries scattered across the territory, Haiti is one of the few countries preserving ancestral purist traditions in rum production. This authenticity is guaranteed through the exclusive use of native, non-hybrid sugarcane varieties, cultivated organically without any pesticides or chemicals, as well as natural spontaneous fermentation without added industrial yeasts and traditional unfiltered distillation.
Sugarcane is grown in agroforestry, complementing other local species such as banana and mango, thus ensuring a sustainable ecosystem. The cane remains under nature's protection for 18 months before manual harvesting. This harvest is carried out with traditional tools like the machete for cutting, and ox-drawn carts transport the cane to the distilleries. During harvest, the canes are carried by hand to the mills, where they are pressed between manual rollers, collecting the juice in stone containers. Meanwhile, a human chain handles the transport of multiple cane residues to drying areas. In accordance with the quality label confirmed by the "Triple A" designation, this rigorous protocol requires a minimum fermentation of 120 hours, followed by distillation limited to 5 copper stills heated by direct fire, before immediate bottling in Haiti.
Traditionally consumed fresh and unaged, Clairin has taken a step towards exceptionality with this Vieux Casimir, aged in ex-Caroni rum casks. Bottled in a limited edition to celebrate the 65th anniversary of La Maison du Whisky, this single cask comes exclusively from the Faubert Casimir distillery, located in the prestigious agricultural region of Baradères. Originating from the very first batch of Clairins aged in 2016, this rum benefited from meticulous aging of 5 years, giving this spirit an exceptional aromatic richness.
