Clairins represent the authentic rums of Haiti, a country with 532 artisanal distilleries spread across the only Caribbean island that rebelled against slavery in 1804. Today, Haiti stands out as one of the few countries preserving pure rum-making traditions, thanks to the use of native, non-hybrid sugarcane varieties, organic farming without pesticides or chemicals, exclusively natural spontaneous fermentation without added yeasts, as well as archaic artisanal distillation in unfiltered copper pot stills, a true guarantee of authenticity and character.
Sugarcane is cultivated in agroforestry, alongside plant species such as banana and mango trees, and left natural without chemical intervention until harvest, which takes place 18 months after planting. Harvesting is done manually with a machete, and transport to the distillery is by ox-drawn carts, thus preserving ancestral know-how. The cut canes are carried by hand to the mill where they are pressed between rollers to extract the juice, which flows into a stone container. Meanwhile, a human chain transports the bagasse to the drying area. According to the strict criteria guaranteeing the "Triple A" designation, fermentation lasts at least 120 hours, distillation is carried out in a maximum of 5 traditional copper pot stills heated by direct fire, and the rum is bottled immediately after distillation, on site in Haiti, to preserve all its freshness and unique aromas.
Usually consumed young, Clairin stands out here with this Vieux Vaval, a rum aged in ex-Single Malt casks celebrating the 65th anniversary of La Maison du Whisky. This single cask comes from the prestigious Arawaks distillery and is made from the "Madame Meuze" sugarcane variety, emblematic of the exceptional terroir of Cavaillon. This 2015 vintage is among the very first aging Clairins officially put into casks and has benefited from precious aging for 6 years, offering a rare aromatic complexity and unprecedented depth in the world of Haitian rums.
