The Clairins represent the very essence of artisanal rums from Haiti, a Caribbean island where more than 532 small traditional distilleries maintain a unique know-how. Haiti, famous for its historic rebellion against slavery in 1804, is today one of the few territories preserving authentic and purist production practices: exclusive use of native, non-hybrid sugarcane varieties, 100% natural cultivation without pesticides or chemicals, spontaneous fermentation without added industrial yeasts, and ancestral unfiltered distillation that guarantees the full aromatic richness of the rum.
The sugarcane is grown in ecological association with other plant species such as banana and mango, in a completely preserved environment without chemical intervention. The harvest, respecting a natural cycle of 18 months after planting, is done entirely by hand. The canes are cut with a traditional machete and transported to the distillery by ox-drawn carts, symbols of a craft deeply rooted in local culture. After cutting, the cane stalks are pressed between rollers to extract the juice into a stone container, while a human chain carries the dry fibers to an area dedicated to natural drying.
To obtain the prestigious "Triple A" designation, the process must follow a strict protocol: fermentation must last at least 120 hours, distillation must be carried out in a maximum of 5 traditional copper stills heated by direct fire, and bottling must take place immediately after distillation, exclusively in Haiti. This rigorous respect for artisanal methods gives each bottle exceptional quality and a unique aromatic profile impossible to reproduce industrially.
This Clairin Vaval was passionately developed by Fritz Vaval at the Arrawaks distillery located in Cavaillon, thus perpetuating the heritage of authentic Haitian rums.
