RHUM A1710 - La Perle Rare - Organic Blue Cane 2021 - 52.9%
The exceptional history of the Assier family in Martinique begins in 1710, when Jean Assier, a young lawyer from Montpellier, arrives on the island and serves with the Governor of Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, carries an ambitious and passionate project: to found an artisanal rum distillery rooted in the history and incomparable richness of the Caribbean terroir. The acquisition of the Habitation du Simon, located in the heart of an exceptional terroir, combined with Yves's unwavering passion for his island and its natural treasures, allows him to carefully build a unique rum brand, skillfully combining ancestral tradition and modern innovation.
In 2010, the project took shape with the meticulous selection of the finest aged rums intended for blending. A maturation cellar equipped with casks that previously held Cognac and a quality control laboratory were created at the Habitation. The first selected batches, aged 6 to 11 years, were then refined in 320-liter French oak barrels. At the same time, in search of a distillation process that is both traditional and innovative, Yves Assier chose a Charentais copper still equipped with a seven-plate column for excellent distillation. Long and controlled fermentations are carried out in modern temperature-regulated vats, thus ensuring cane wines with exceptional aromatic potential. After rigorous administrative procedures, the official authorization to open was granted on December 31, 2015, giving birth to a distillery specialized in Agricole Rums. Installed in an old 18th-century sugar purging house, the rum distillery came to life in the heart of the estate, and after a decade of learning and reflection, the A1710 distillery was inaugurated in December 2016 by Yves Assier de Pompignan and his team.
The A1710 rums are produced in organic farming, from sugar canes grown without chemical fertilizers, pesticides, or herbicides on a dedicated plot where two exceptional varieties grow: the "Blue Cane" and the "Purple Cane".
This exclusive edition of La Perle Rare is entirely produced from blue sugar canes (B69-566) from certified organic farming, thus guaranteeing absolute respect for the environment and unmatched aromatic purity.
