Located in the heart of northern Martinique, on the majestic slopes of Montagne Pelée, Habitation Bellevue benefits from an ideal humid tropical climate as well as rich and very fertile volcanic soils, perfect for cultivating exceptional sugarcane. This geological specificity gives the canes a unique aromatic profile, essential to the quality of the rums produced. In 1914, Gustave Crassous de Médeuil acquired the J.M Rum Distillery from the family of Jean-Marie Martin. For over a century, the Crassous de Médeuil heirs have rigorously and passionately upheld the tradition of making Rhum J.M, synonymous with excellence and authenticity.
The sugarcanes are cultivated respecting sustainable agricultural methods and are rigorously selected for their superior quality. They are crushed in mills within less than an hour after harvest; this essential process guarantees cane juice of incomparable freshness and aromatic richness, the foundation of the unique character of Rhum J.M. The J.M distillery is one of the few in Martinique to use pure spring water sourced directly from Montagne Pelée, known for its richness in minerals. This natural water greatly contributes to the taste profile and the characteristic smoothness of these exceptional agricultural rums.
Distillation is carefully carried out in two traditional Creole-style copper columns, thus preserving the authenticity and finesse of the aromas. Oak barrels, meticulously selected and previously charred, are used for aging, enhancing the complex flavors and depth of the rum. Each year, the cellar master performs a meticulous topping up of the barrels, filling them with rums of the same age to maintain the unique typicity specific to each vintage.
