Ninkasi was founded in 1997 in Lyon by three visionary young graduates with a clear ambition: to introduce the innovative concept of American microbreweries to France and to spark the craft beer revolution. This company embodies strong values such as local emergence, the promotion of short supply chains, and the harmonious fusion of trades, audiences, and styles. Building on its success in the brewing world, Ninkasi naturally extended its expertise to distillation in 2014, convinced that whisky and beer share the same essence. The first whiskies were marketed as early as 2017, the result of dual expertise around common raw materials: malted barley, yeasts, pure water, and mastery of fire. The production site located in Tarare, in the Rhône, benefits from exceptionally rare water, ideal for crafting exceptional whiskies.
The Clos des Spiritueux Single Malts come from small limited series, called Tracks, favoring short supply chains and artisanal quality. Each bottle expresses exceptional know-how, the result of years of experience in malted barley since 1997, enhanced by a unique aging in wine casks from prestigious terroirs in the region. The cellar currently holds 112 casks in maturation, with various malt varieties and a rigorous selection of casks from renowned origins such as Condrieu, Pouilly-Fuissé, and Pinot Noir.
This exclusive edition limited to 282 bottles is made from a "pale" type malt. After a first maturation in a new medium-charred cask in June 2017, this whisky benefited from an exceptional finishing in an ex-Morgon cask, a red wine emblematic of Beaujolais. This unique cask (#23) was carefully bottled in August 2021, offering unparalleled aromatic complexity and gustatory richness.
