The fascinating history of the Assier family in Martinique begins in 1710, when Jean Assier, a young lawyer from Montpellier, arrived on the island and served under Governor Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, carries a bold and passionate project: the creation of a new emblematic rum distillery named Clos des Spiritueux. This unique estate embodies both the historical richness and the nobility of the exceptional terroir of the French Antilles. The acquisition of the Habitation du Simon, ideally located in the heart of a prestigious terroir, along with Yves Assier de Pompignan's deep passion for his homeland, led him to conceive over the years a distinctive rum brand combining ancestral tradition and modern innovation.
In 2010, the official launch of the project marked a key milestone: the rigorous selection of great aged rums intended for blending began. A maturation cellar equipped with carefully chosen barrels, notably casks previously used for Cognac, as well as a dedicated laboratory, were created within the Habitation. The first selections, aged 6 to 11 years, were then refined in 320-liter French oak barrels to extend their maturation. At the same time, the search for a distillation method that is both innovative, qualitative, and traditional led Yves Assier to choose a 100% copper Charentais still, complemented by a seven-plate column. The fermentation vats are temperature-controlled, promoting long fermentations to extract maximum flavors and aromatic potential from the cane juices. After rigorous administrative procedures, authorization to open a distillery specialized in Agricole Rums was obtained on December 31, 2015. Work then began in an 18th-century former sugar purging house located at the heart of the estate. After a decade of efforts, the A1710 distillery finally came to life in December 2016, inaugurated by Yves Assier de Pompignan and his team within the Habitation.
The A1710 Rums are produced using a fully organic process, from sugarcane grown on a plot cultivated without any fertilizers, pesticides, herbicides, or chemicals. These canes, planted directly on site, include two emblematic varieties: the Blue Cane and the Purple Cane, cultivated with authenticity and environmental respect.
La Perle Fine is distilled twice from fresh cane juice, hand-harvested in the plots of Madame Joseph Sylvestre, Monsieur Paul Octave de Ducos, as well as in the Saint-Esprit region. The canes are cut by hand and undergo only a single pressing. After a long fermentation of 5 to 7 days, the vesou is distilled twice several days apart. This gives this exceptional rum all its character. La Perle Fine is bottled at its natural strength, powerful and intense, at 67.5% alcohol, embodying the very essence of the Martinican terroir and the excellence of Clos des Spiritueux's know-how.
