In 1994, Yves and José Hayot took over the property after a difficult period marked by judicial recovery. They undertook significant renovation work that restored Habitation Saint Étienne, now classified as a Historic Monument. Saint-Étienne rum is carefully distilled in a traditional Creole copper column still, a technical gem from the Simon distillery located in François (Martinique), guaranteeing an extraction rich in unique flavors and authentic character.
