The prestigious history of the Assier family in Martinique begins in 1710, when Jean Assier, a young lawyer from Montpellier, arrived on the island and joined the service of the Governor of Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, carries an ambitious and exciting project: the creation of a new rum distillery that draws its identity from the unique history and exceptional richness of the Caribbean terroir. Thanks to the acquisition of Habitation du Simon, ideally located in the heart of an exceptional terroir, and Yves Assier de Pompignan's unwavering passion for his island and its natural riches, he has devoted many years to imagining a rum brand combining authenticity, tradition, and innovation.
In 2010, the project officially began with the careful selection of the best aged rums intended for blending. A maturation cellar was set up, equipped with barrels previously used for Cognac, as well as a high-performance laboratory at the Habitation. The first selections, aged 6 to 11 years, were then refined in 320-liter French oak casks. At the same time, the quest for a distillation process that is both innovative, qualitative, and traditional led Yves Assier to adopt a Charentais copper pot still coupled with a seven-plate column. Temperature-controlled fermentation tanks ensure long fermentations, essential for obtaining cane vinegars rich in aromas. After many complex administrative procedures, authorization to open a distillery dedicated to the production of Agricole Rums was obtained on December 31, 2015. Significant restoration work followed in an 18th-century former sugar purging house located at the heart of the estate. Thus, after more than 10 years of research and learning, the brand-new A1710 distillery was inaugurated in December 2016 at the Habitation by Yves Assier de Pompignan and his passionate team.
The A1710 Rums are produced according to rigorous organic practices. They come exclusively from sugarcane grown on a plot certified free of fertilizers, pesticides, herbicides, or any chemical products, planted directly on site. Two specific varieties of sugarcane are carefully cultivated: the renowned "Blue Cane" and the delicate "Purple Cane", thus developing a unique and authentic aromatic palette.
Cheval Bondieu is an exceptional blend of agricole rums aged under wood for a period of 18 to 36 months in carefully selected French and American oak barrels. This rum is distilled in a copper still equipped with a 7-plate column, named "La Belle Aline." This cuvée represents the very first aged rum produced by the Clos des Spiritueux distillery, a symbol of excellence and modern Caribbean know-how.
