SAINT JAMES - Organic White Rum - 40%
The Saint-James Distillery is located in Martinique, a flagship island for the culture of agricultural rum. Its history begins with Reverend Edmond Lefébure, former Superior Father at the Brothers of Charity convent and a passionate chemist. Quickly, he perceived the exceptional potential of sugarcane spirits distilled near his hospital and decided to produce them himself. The adventure continued and in 1973, the Cointreau group acquired the Saint-James Rums, centralizing all production in Sainte-Marie. In 2003, the Cointreau house sold the distillery to the La Martiniquaise group, the current owner and a major player in French rum.
Saint James rum is made from the fermentation and then distillation in a Creole column of pure sugarcane juice, a traditional method recognized by the A.O.C. rum of Martinique. This artisanal process gives Saint James rums an incomparable aromatic richness, designed for optimal aging in oak barrels. True to its know-how, the distillery does not allow any sweetener additions, thus guaranteeing a rum of authentic purity. Committed to a sustainable economy, it optimizes its environmental impact: the sugarcane fields located nearby reduce CO2 emissions related to transport. Bagasse, the fibrous residue from pressing, is used as fuel to power the distillation columns and mills, while part is valorized as compost or converted into electricity thanks to an innovative turbo-alternator. Finally, vinasse, the liquid by-product of distillation, is treated to sustainably irrigate the cane plantations.
The Saint James Organic White Rum comes from a rigorous parcel selection, harvested at full maturity and cultivated according to the principles of certified organic farming for many years. It is distilled exclusively in a traditional Creole column, guaranteeing a pure and natural aromatic expression, reflecting the richness of the Martinican terroir.
