Clairins embody the authentic rums of Haiti, a country rich with 532 small artisanal distilleries scattered across the only Caribbean island that defied slavery in 1804. Today, Haiti remains one of the few territories preserving purely artisanal and ancestral traditions: with its indigenous varieties of non-hybrid sugarcane, its ecological cultivation free from chemicals, spontaneous fermentation without added commercial yeasts, and an archaic, unfiltered distillation ensuring a rum of exceptional purity.
Sugarcane is grown in association with other local plant species such as banana and mango, benefiting from a natural environment completely free of chemical interventions until harvest, which takes place 18 months after planting. The harvest is done manually, cut with a traditional machete, then transported by ox-drawn carts, perpetuating authentic ancestral methods. Once cut, the canes are carried by hand to the mill where they are pressed between rollers, the juice flowing into a stone container. Meanwhile, a human chain transports the pressed canes to a drying area. The strict protocol to obtain the prestigious "Triple A" designation requires fermentation of at least 120 hours, followed by distillation in a maximum of 5 direct-fire copper stills. The resulting rum is bottled immediately after distillation, exclusively in Haiti, guaranteeing perfect traceability and impeccable quality.
The Casimir white rum is made from sugarcane harvested in 2018. Faithful to the tradition initiated by his father Duncan Casimir, Faubert Casimir enriches the natural fermentation of sugarcane with a subtle selection of carefully chosen plant ingredients: lemongrass, cinnamon, ginger, and other local spices, bringing a unique aromatic complexity and a typical flavor signature of the best Clairins of Haiti.
