The Saint James Distillery, a historic emblem of Martinican agricultural rum, is located in Martinique. Its history began thanks to Reverend Edmond Lefébure, then Superior Father at the Brothers of Charity convent and passionate about chemistry. Captivated by the aromatic potential of cane spirits distilled near his hospital, he decided to dedicate himself to the artisanal production of rum. In 1973, the Cointreau company acquired Saint James Rums and centralized all production in Sainte-Marie, perpetuating an authentic know-how. Since 2003, the distillery has belonged to the La Martiniquaise group, thus guaranteeing the continuity of this exceptional tradition.
The Saint James rum is made from the fermentation and distillation in a Creole column of pure juice from freshly harvested sugar cane. This method, certified A.O.C Rhum Agricole de Martinique, ensures a diversity of complex aromas, ideal for aging in oak barrels. No sweeteners or colorants are allowed, guaranteeing the purity of the rum. The distillery is also committed to a sustainable economy approach: sugar canes are grown nearby to limit transportation and reduce CO2 emissions. Bagasse, the fibrous residue from pressing sugar cane, is used as fuel to supply the distillery with energy and steam. It is also transformed into compost or electricity thanks to a turbo-alternator. Finally, vinasse, the liquid residue from distillation, is treated to produce water reused for irrigating the cane plantations, thus contributing to responsible management of natural resources.
