The Clairins represent the very essence of Haitian rums, an island in the Caribbean famous for its 532 traditional artisanal distilleries. Haiti, the first nation to abolish slavery in 1804, still preserves today ancestral agricultural and distillation practices. This exceptional rum is made with native varieties of non-hybrid sugarcane, cultivated without any chemical treatment, naturally fermented through spontaneous fermentation without artificial yeasts, and traditionally distilled in copper stills, without filtration.
The sugarcane is grown in intercropping with other local species such as banana and mango, promoting a sustainable natural ecosystem. The cane is left untouched until harvest, which takes place 18 months after planting. This harvest is carefully done by hand, using a traditional machete, then transported by ox-drawn carts, ensuring an environmentally and terroir respectful approach. The cut canes are then manually carried to the mill where they are pressed between rollers, collecting a clear juice in stone containers. The bagasse is dried separately by a dedicated human chain. To obtain the prestigious "Triple A" certification, the protocol follows strict criteria: fermentation of at least 120 hours, distillation exclusively in a maximum of 5 traditional copper stills heated by direct fire, and immediate bottling after distillation, done exclusively in Haiti.
