The Saint-James Distillery is located in Martinique, an island worldwide renowned for the exceptional quality of its agricole rums. Its history begins with Reverend Edmond Lefébure, then Superior Father of the Brothers of Charity convent and passionate about chemistry. Very quickly, he discovered the unique potential of the eaux-de-vie made from sugarcane distilled near his hospital and decided to produce it himself to enhance this exceptional terroir. In 1973, the Cointreau company acquired the Saint-James Rums and centralized production in Sainte-Marie. Then, in 2003, Cointreau sold the distillery to the La Martiniquaise group, the current owner, committed to promoting authentic and excellent agricole rums.
Saint James rum is made from the fermentation and then distillation in a Creole column of pure sugarcane juice, a traditional technique recognized and compliant with the A.O.C Rhum de la Martinique designation. This ancestral method gives Saint James rums a rich and complex aromatic palette, perfectly suited for long aging in oak barrels. Strictly, no addition of sweeteners or artificial flavors is allowed, guaranteeing the authenticity of the final product. Furthermore, the distillery is engaged in a dynamic of sustainable and responsible economy, aiming to minimize its ecological footprint. The sugarcane plantations located in the immediate vicinity significantly reduce CO2 emissions related to transport. Bagasse, the fibrous residue from pressing the cane, is used as a renewable energy source to supply steam to the distillation columns and mills, as well as partially recycled into compost or converted into electricity via a turbo-alternator. Finally, vinasse, the liquid residue from distillation, is carefully treated to produce purified water used for field irrigation, thus closing a virtuous cycle respectful of the environment.
The famous Brut de fût 2003 makes its grand return with an additional year of barrel aging, totaling 16 years of refinement to offer an even more intense and refined tasting experience.
