RHUM A1710 - Cheval Bondieu - 51.2%
The exceptional history of the Assier family in Martinique dates back to 1710, when Jean Assier, a young lawyer from Montpellier, set foot on the island and served alongside Governor Phélypeaux. Several centuries later, his direct descendant, Yves Assier de Pompignan, embarked on an ambitious and passionate venture: the creation of a new exceptional rum distillery, a faithful reflection of the soul and unique terroir of the Antilles. Thus, by taking over the Habitation du Simon, ideally located in the heart of an exceptional terroir, and driven by an unwavering passion for the natural richness of Martinique, Yves Assier de Pompignan dedicated many years to building a rum brand that subtly combines ancestral tradition and modern innovation.
In 2010, the strategic decision was made: to launch this project of excellence. A rigorous selection process began for the finest aged rums intended for exclusive blends. A maturation cellar was set up, equipped with barrels formerly used for Cognac, and a dedicated laboratory was installed at the Habitation. The first selections of rums, aged between 6 and 11 years, were then placed in 320-liter French oak barrels for optimal maturation. At the same time, aiming to combine quality and authenticity, Yves Assier opted for an innovative distillation solution: a copper Charentais still equipped with a seven-plate column, ensuring distillation that respects the aromas. Temperature-controlled fermentation tanks allow for long fermentations, essential for developing rich and aromatic cane wines. After lengthy administrative procedures, authorization to operate an Agricole Rum distillery was obtained on December 31, 2015. Work then began in an old 18th-century sugar purging house located in the very heart of the estate. Finally, after ten years of learning and creation, the brand new A1710 distillery was inaugurated in December 2016 by Yves Assier de Pompignan and his passionate team.
The A1710 Rums are produced according to a strict organic specification, from sugarcane grown on a plot cultivated without chemical fertilizers, pesticides, or herbicides. This preserved terroir hosts two ancient varieties of sugarcane: the Blue Cane and the Purple Cane, guarantees of authenticity and incomparable aromatic richness.
Cheval Bondieu is a unique blend of rums that have matured under wood for a period ranging from 18 to 36 months in French and American oak barrels. This precious nectar is the result of distillation carried out in a copper still equipped with a seven-plate column, nicknamed "La Belle Aline." This exceptional cuvée is the first emblematic aged rum of the A1710 distillery, thus revealing all the richness and aromatic complexity that the Martinican terroir can offer.
