TROIS RIVIERES - Vieux de l'Océan - 54%
The emblematic plantation of Trois Rivières is an essential jewel of the historical and cultural heritage of Martinique. Founded in 1660, it owes its origin to Nicolas Fouquet, superintendent of King Louis XIV, who was granted 2,000 hectares of land located in the south of the island. In 1785, Etienne Isaïe Marraud Des Grottes, a prominent landowner from northern Martinique, acquired these lands, combining artisanal rum production with traditional sugar cane production. Throughout the 18th and 19th centuries, the plantation specialized in the cultivation and processing of sugar before beginning, at the start of the 20th century, the production of the renowned Agricole rum, which became its exclusive vocation from 1940 onwards. The Trois Rivières distillery was integrated into the société B.B.S. group in 1994, already owner of the prestigious La Mauny rums. Two years later, Trois Rivières was honored with the AOC label (Appellation d’Origine Contrôlée martiniquaise), making it to date the only rum in the world to benefit from such a protected distinction. Its legendary name comes from the three mythical rivers that irrigate the vast sugar cane fields: Oman, Bois d’Inde, and Saint Pierre.
The production process begins with the careful harvesting of sugar cane in February, when their sugar content is optimal. Quickly cut and crushed within less than 24 hours, the canes release a juice of exceptional purity, which is transferred into open fermentation tanks for 24 to 30 hours. Under the action of natural yeasts, this cane juice transforms into a delicate cane wine, which is then precisely distilled in a traditional Creole column still, ensuring the finesse and aromatic authenticity of the product. The resulting rums age patiently in maritime oak barrels (with a capacity never exceeding 650 liters), for a minimum of 3 years, refining their flavors and developing an unparalleled complexity within the family of agricole rums.
The Trois Rivières "Vieux de l’Océan" cuvée benefits from a unique remineralization technique, including a precious touch of natural seawater taken off the coast of the commune of Le Diamant, in the heart of Martinique. This exclusive process gives this exceptional rum subtle marine notes and a mineral freshness that elevate its taste profile to incomparable heights.
