The Clairins embody the authentic soul of artisanal Haitian rums, where more than 532 traditional micro-distilleries dot the only Caribbean island to have freed itself from slavery as early as 1804. Today, Haiti remains one of the few countries preserving ancestral and purist practices of agricole rum: exclusive use of native, non-hybrid sugarcane varieties, organic cultivation without chemical inputs, spontaneous fermentation based on indigenous yeasts, and rustic artisanal distillation without filtration.
The sugarcane is grown intercropped with local species such as banana and mango trees, promoting sustainable agroecology. This cane is left to grow naturally for about 18 months before manual harvesting. The cutting is done with a machete, then the canes are transported to the distillery by ox-drawn carts, ensuring a 100% traditional method. On site, the canes are sorted and pressed between artisanal rollers, the juice flowing into stone vats. A human chain ensures the transfer of dried bagasse to the storage area.
To meet the requirements of the prestigious "Triple A" appellation, the rum must follow a strict protocol: fermentation of at least 120 hours, distillation limited to five direct-fire copper-plate stills, and immediate bottling in Haiti, guaranteeing an exceptional product of unmatched authenticity.
The Clairin Vieux Sajous Cask Strength is a meticulous blend of 12 barrels carefully selected and aged for 4 years at the Haitian Distillery Chelo. Some barrels come from former peated whiskies like BenRiach or Caroni rums, thus giving the rum an exceptional aromatic complexity. This Clairin is bottled at cask strength with a remarkable power of 50.60%, without filtration or dilution, revealing an intense and unique character.
