The Clairins represent the authentic rums of Haiti, a unique Caribbean island home to 532 small artisanal distilleries. Haiti, the first country to abolish slavery in 1804, is also one of the last strongholds where pure rum-making traditions persist. These exceptional rums are made from native varieties of non-hybrid sugarcane, grown without any chemicals, naturally fermented through spontaneous fermentation without added yeasts, and traditionally distilled in old stills, without filtration or refining.
Haitian sugarcane is cultivated in sustainable agroforestry, interplanted with fruit trees such as banana and mango, thus promoting biodiversity and terroir quality. This environmentally respectful cultivation is left without chemical intervention for 18 months until manual harvest. The cutting is done by hand using a traditional machete, then the canes are transported by ox-drawn carts to artisanal mills. A human chain ensures the transport of pressed canes to drying areas, guaranteeing an authentic and respectful process. To obtain the prestigious "Triple A" designation, fermentation must last at least 120 hours, distillation must take place in a maximum of 5 direct-heated copper-plate stills, and bottling must occur immediately after distillation in Haiti, ensuring optimal quality.
The Clairin Communal is a unique blend of rums from the four emblematic communes of Haiti: Barraderes, Cavaillon, Pignon, and Saint Michel.
