The Clairins are the authentic rums of Haiti, a country rich in history where 532 small artisanal distilleries coexist on this Caribbean island, famous for its victorious rebellion against slavery in 1804. Haiti today stands out as one of the last strongholds in the world preserving pure and ancestral traditions, notably thanks to its native varieties of non-hybrid sugarcane, its organic cultivation free of any pesticides, its spontaneous fermentation without added industrial yeasts, as well as its archaic and unfiltered traditional distillation, guaranteeing unparalleled purity and aromatic richness.
The sugarcane is grown in agroforestry, in association with other plant species such as banana and mango, which promotes a natural and sustainable ecosystem. It grows without any chemical intervention until harvest, which takes place about 18 months after planting. The harvest is manual, cutting is done with a machete, a true traditional cane knife, and transport to the distillery is done by ox-drawn carts, thus respecting an ancestral know-how. The cut canes are then carried by hand to the mill where they are crushed between two rollers, collecting the juice in a stone container. Meanwhile, a human chain collects the pressed canes to carry them to a drying area. To obtain the prestigious "Triple A" designation, a strict protocol is applied: fermentation lasts at least 120 hours, followed by distillation carried out in a maximum of five copper-plate stills, heated by direct flame contact. The rum is then bottled immediately after leaving the still, ensuring unique freshness and authenticity, with bottling exclusively done in Haiti.
The Clairin Sajous Asyen Oloroso Cask #SA17OL-2 benefits from a meticulous aging of 29 months in casks that previously held Oloroso, an aging that gives it complex and intense notes. This exceptional reference was rigorously selected by Benoit Maxwell, a globally recognized expert in rums and agaves, and manager at La Maison du Whisky.
