\nClairins are the authentic rums of Haiti, produced in one of the 532 artisanal distilleries scattered across this iconic Caribbean island, known for being the first to free itself from slavery in 1804. Haiti remains today one of the few countries preserving ancestral and purist rum-making traditions, thanks to its indigenous, non-hybrid sugarcane varieties, entirely organic and natural agriculture, spontaneous fermentation without added industrial yeasts, as well as traditional unfiltered distillation that gives its rums a unique and deeply authentic character.
\nThe cultivation of sugarcane follows an agroecological model, practiced in intercropping with fruit trees such as banana and mango, promoting biodiversity and soil health. The plantations undergo no chemical intervention and the harvest, carried out manually 18 months after planting, respects ancestral know-how. Each cane is cut by hand with a traditional machete then transported by ox-drawn carts to the artisanal distilleries. There, the cane is pressed in mills releasing juice collected in stone containers, and the bagasse is naturally dried. This rigorous process complies with the "Triple A" label requirements, which impose a minimum fermentation of 120 hours, distillation in a maximum of 5 copper stills heated by direct fire, as well as rapid bottling directly in Haiti, thus guaranteeing exceptional quality and freshness.
\nThe Clairin Sajous Ansyen Single Cask #SJ17BI-2 benefits from aging in ex-rum barrels for 37 months, bringing complexity and depth. This exceptional rum, carefully selected by Guillaume Drouot for the famous Bar Danico in Paris, is available in a limited edition of only 204 numbered bottles.
