The prestigious Depaz Distillery is located in Martinique, on the majestic slopes of the Montagne Pelée, in the heart of the northern part of the island. Originally dedicated to the cultivation of tobacco, indigo, and livestock farming, these agricultural lands were quickly converted by Victor Depaz for the intensive cultivation of sugarcane, whose expansion was made possible thanks to major advances in traditional distillation techniques. However, on May 8, 1902, the fearsome awakening of the Montagne Pelée volcano destroyed the town of Saint-Pierre. Victor Depaz, then a student in Bordeaux, learned of this tragedy along with the loss of his entire family. Orphaned and ruined, he decided to emigrate to Canada. During his journey, a stopover in Martinique rekindled his attachment to his homeland: he then chose to return to Saint-Pierre, to the Habitation Périnelle where he grew up. On May 8, 1917, exactly 15 years after the eruption, he relaunched his new distillery, powered by his 521 hectares of sugarcane on the fertile slopes of Montagne Pelée. Subsequently, he built a family home, a faithful replica of the Habitation Périnelle of his childhood, soon named "Château Depaz," where he settled in 1922 with his wife and their eleven children. In the 1950s, it was Victor's sons, André and Raoul Depaz, who took up the mantle. They modernized the plantations and the distillery, now recognized as the Depaz distillery, combining tradition and innovation.
The Depaz distillery, one of the smallest but also one of the most authentic production units in Martinique, passionately perpetuates its ancestral methods. True to its origins, it still operates today thanks to an old steam engine from the era, the true beating heart of the distillery. This machine supplies steam to the mills that crush the sugarcane, as well as to the distillation columns, ensuring exceptional quality and unique traditional know-how.
