The genesis of this rum dates back to 1710, the fruit of the passionate vision of Jean Assier. Today, it is his direct descendant, Yves Assier de Pompignan, who breathes a new philosophy into the distillery and the Habitation du Simon, recently integrated into the brand. This distillery, a true gem, is equipped with an exceptional Charentais copper still, complemented by a 7-plate column called "Belle Aline." Located in an idyllic setting in the heart of nature and vast sugarcane fields, a dedicated team meticulously oversees every step of the production of these great rums: from cane cultivation to bottling. Each operation is carried out by hand with unparalleled artisanal care. Here, traditional know-how reigns supreme, making this micro-distillery a benchmark in rums crafted with excellence and passion.
Diamond Rock is the latest creation from this exceptional micro-distillery. It is an agricultural white rum, distilled exclusively from fresh canes, pressed only once to preserve all the richness of their essence. The long cane, hand-harvested, is brought to the A1710 three-roll mill, located at Habitation du Simon in Le François, Martinique. It undergoes a unique crushing to extract a pure and perfectly balanced nectar. This first and only pressing guarantees juice of impeccable quality. Slowly distilled in a copper still equipped with a 7-plate column, Diamond Rock is then reduced to 50.5% vol., offering a perfect balance between power and finesse.
