Its origin dates back to 1710, the result of the avant-garde vision of Jean Assier. Today, his direct descendant, Yves Assier de Pompignan, passionately leads the new dynamic of the distillery and the Habitation du Simon, now under the aegis of the house Clos des Spiritueux. This distillery is distinguished by rare and prestigious equipment: a copper Charentais still, complemented by 7 plates, charmingly named "Belle Aline."
The challenge taken up by Stéphanie Martin, Cellar Master of the House, during the creation of this Renaissance 2017 vintage was to achieve a perfect balance between freshness, aromatic complexity, lightness, and power. This exceptional rum is ideal to be enjoyed both as an aperitif and as a digestif, for an unforgettable tasting experience. This ambitious goal was brilliantly achieved thanks to a rigorous and controlled process. The slow fermentation, lasting 5 to 6 days, is carried out with fresh cane juice and special oenological yeasts. Distillation then takes place in the "Belle Aline" still, before the precious eaux-de-vie mature for a long time in ex-Cognac barrels, giving the rum its refined aromas and depth.
