The legendary Caroni distillery, founded in 1918 in Trinidad & Tobago, is one of the most emblematic in the region. A state-owned distillery with its own sugar mill, Caroni guarantees the exclusive use of locally grown sugarcane with traditional expertise and optimal quality. Equipped with a wide variety of stills, ranging from columns to pot stills, this distillery long maintained a veil of mystery around its productions. Indeed, very few of its rums were bottled under its own label, which gives them an almost legendary status. Its aromatic signature, marked by distinctive notes of hydrocarbons, soft spices, and a subtle touch of honey, makes each Caroni rum a unique tasting experience. Although the distillery closed its doors in 2002 due to a deep crisis in the sugar industry, its rums are today rare treasures highly sought after by connoisseurs, reaching an almost mythical dimension.
