The Saint-James Distillery, emblematic of Martinique, draws its roots from a centuries-old passion. Founded by Reverend Edmond Lefébure, then Superior Father at the Brothers of Charity convent and a passionate chemist, Saint-James has always known how to harness the exceptional potential of locally distilled cane spirits around its hospital. The distillery's history continued with the acquisition by the Cointreau company in 1973, consolidating all production in Sainte-Marie. In 2003, the prestigious house La Martiniquaise became the owner, strengthening the reputation for excellence of Saint James rums.
Saint James rum is made from the fermentation and distillation in a Creole column of pure sugarcane juice, a typical process recognized as A.O.C Rhum de la Martinique. This traditional technique gives the rums a rich and complex aromatic palette, ideal for optimal aging in French oak barrels. In full transparency, no sweeteners are added, ensuring exceptional purity and authenticity. Today, the distillery is fully committed to an eco-responsible approach to minimize its environmental footprint. The cane fields cultivated in the immediate vicinity reduce CO2 emissions related to transport. Bagasse, the fibrous residue after pressing, is used as fuel to power the distillation columns and mills, while also being partially composted or converted into electricity via a turbo-alternator. Finally, vinasse, the liquid residue, is treated to produce water used for irrigating the cane fields, thus closing a virtuous and sustainable cycle.
The Les Ephémères Lot No.5 cuvée is a rarity, a limited edition exclusive to 5,006 numbered bottles. This very old agricole rum was carefully aged in 320-liter French oak barrels, beginning this aging on December 20, 2005, before being bottled barrel proof on October 3, 2022.
