The Akashi Sake Brewery is ideally located in the picturesque Hyogo region, facing the Seto Inland Sea, in Japan. Since 1856, the Yonezawa family has been preserving its ancestral expertise in the city of Akashi. After mastering the traditional art of sake brewing with excellence, this passionate family innovated by venturing into distillation as early as 1917. Today, more than a century later, Kimio Yonezawa, a renowned master blender, proudly honors and passes on this exceptional heritage.
The Shiraume is an exquisite Umeshu, a refined liqueur made from authentic Japanese plums. These carefully selected plums are delicately macerated in precious Saké Ginjo for six months, ensuring a perfect infusion of flavors. After this meticulous step, the plum liqueur undergoes optimal aging for 2 years in stainless steel tanks, which gives it a unique complexity and sweetness, characteristic of a superior artisanal production.
