Daftmill is an exceptional craft distillery located on a traditional family farm in the heart of the Howe of Fife, a prestigious region of the Lowlands in Scotland. This mixed farm produces a variety of crops such as carrots, broccoli, potatoes, and mainly cultivates brewing barley, the essential raw material for its whiskies. At the same time, it raises beef cattle in a natural, environmentally respectful setting. In June 2003, the passionate brothers Francis and Ian Cuthbert obtained permission to convert old mill buildings into an authentic and innovative distillery. Between 2004 and late 2005, renovation work on the buildings and meticulous installation of distillation equipment were carried out, culminating in the official granting of their distillation license. Their equipment includes a main still of 3,000 liters and a second still of 2,000 liters, as well as a Forsyths mash tun made in Rothes, all complemented by interventions from renowned local craftsmen from Cupar. The first Daftmill whisky was produced on December 16, 2005, making the distillery the newest opening in Scotland at that time, with first bottlings appearing in May 2018. True to an authentic terroir philosophy, the distillery uses exclusively on-site grown barley and draws its water directly from a well located on the farm. Operating on a unique seasonal rhythm in harmony with agricultural cycles, distillation only takes place during winter and summer, during breaks in farming work. This rare process has not been practiced in Scotland for a century, thus ensuring a limited production of about 100 casks per year, emphasizing the artisanal and confidential nature of Daftmill whiskies.
This exceptional limited edition Daftmill, from the 2008 distillation, was rigorously selected by the recognizable expertise of the Berry Bros team. Bottled in winter 2020, this exclusive batch benefited from aging in carefully chosen Bourbon casks, allowing the whisky to develop a rich and balanced aromatic palette. The total production amounts to only 6,000 bottles, making this version a rare treasure sought after by discerning connoisseurs of high-end Scottish whisky.
