KILCHOMAN - 8 years - 2013 - Sherry Hogshead Single Cask - French Exclusive - 58% ABV
The Kilchoman Distillery is a true rare gem founded in 2005 at the Rochside farm, near Machir Bay, on the spectacular west coast of the island of Islay, in Scotland. Created by Anthony Wills, a former wine industry expert passionate about crafting authentic whiskies, this family-scale artisanal distillery embodies tradition and excellence. Mark and Rohaise French, owners of the Rochside farm, have continued this dream by using only local raw materials, thus reinforcing the philosophy of sustainable production respectful of Islay's terroirs.
This operation is fully self-sufficient and of rare authenticity: the barley is grown, malted, and processed directly at the distillery. All maturation and bottling processes are carried out on-site, ensuring rigorous control at every stage. The pure water comes from a natural spring on Cnoc Dubh, nestled above the Rochside farm, contributing to the finesse of the whisky's character. The Kilchoman Single Malt is bottled without chill filtration or added caramel coloring, thus favoring a natural and clear expression of its aromas. The standard alcohol content is 50% ABV, adjusted with Islay's crystalline water.
Since distillation began in November 2005, about 80% of the aging is done in ex-Bourbon barrels from the famous Buffalo Trace distillery in Kentucky, while the rest is finished in Oloroso sherry casks (250-liter sherry butts) from the Bodega Miguel Martin in Spain, adding depth and complexity. Kilchoman also experiments with prestigious casks such as Sauternes, red wine, rum, Port, Madeira, and Cognac, as well as several secret casks, developing a unique range of flavors. Its two traditional stills have an annual capacity limited to only 90,000 liters, guaranteeing artisanal and quality production, a guarantee of exclusivity and rarity.
To celebrate the Feis Ile festival, Kilchoman and the LMDW teams carefully selected three exceptional casks in 2021, intended exclusively for the French market. This 8-year-old Single Cask, from an ex-Oloroso sherry cask, reveals a powerful and refined expression, enhanced by the intense peated signature of the distillate.
