KILCHOMAN - 14 years - 2007 - Bourbon Single Cask - French Exclusive - 53.3% ABV
The Kilchoman Distillery was founded in 2005 at Rochside Farm, located near the beautiful Machir Bay on the west coast of the island of Islay, in Scotland. This unique artisanal distillery was created by Anthony Wills, a passionate wine industry expert, who wanted to develop a traditional small-scale distillery emphasizing local craftsmanship values. Later, Mark and Rohaise French, owners of Rochside Farm, committed to using only the highest quality local raw materials, making this distillation a true example of authenticity and respect for traditions.
Kilchoman's operation is 100% self-sufficient: barley is grown and malted directly on site, while the entire maturation and bottling process takes place at the distillery itself. The water used comes from a natural spring on Cnoc Dubh, located just above Rochside Farm, ensuring optimal purity and quality of the whisky. This Single Malt is non-chill filtered, with no added caramel, and offers a standard concentration of 50% ABV, achieved by controlled dilution with precious Islay water. Since distillation began in November 2005, about 80% of the spirit is aged in ex-Bourbon barrels from the famous Buffalo Trace distillery in Kentucky, while the remainder matures in 250-liter Oloroso sherry butts from Bodega Miguel Martin in Spain. Beyond traditional Bourbon and Sherry casks, Kilchoman experiments with rare and prestigious barrels: Sauternes, red wine, rum, Port, Madeira, Cognac, as well as various secret maturations. With only two stills, Kilchoman's total capacity is limited to 90,000 liters per year, reinforcing its position as an independent and artisanal distillery.
In tribute to Feis Isle, Kilchoman and the teams at Clos des Spiritueux carefully selected in 2021 three exceptional casks, intended exclusively for the French market. This 14-year-old Single Cask comes from one of the oldest casks ever bottled by the distillery. It is an ex-Bourbon barrel that contained a distillate made from a heavily peated malt, with a concentration of 50 ppm, giving the whisky unique, powerful, and elegant aromas. This limited edition includes only 240 bottles, a precious rarity not to be missed by demanding enthusiasts and collectors.
