The Bunnahabhain Distillery is located on the iconic island of Islay (pronounced "Ayla") in Scotland, a terroir renowned for its unique whiskies with a maritime character. Founded in 1881 by William Robertson in collaboration with William and James Greenlees, this traditional distillery embodies the excellence of Scottish craftsmanship. In 1883, Bunnahabhain's production experienced significant growth, and in 1963, facing increasing demand for Scottish whiskies, the distillery doubled its stills to increase capacity. Despite a halt in 1982 due to a general market downturn, production resumed in 1984, demonstrating the brand's resilience. Since then, the distillery has changed ownership several times before being integrated into the prestigious Distell group in 2013.
The Bunnahabhain whisky-making process is meticulous: it begins with the use of malted and lightly peated barley, mixed with pure water from the "Margadale" spring, heated in the vats. Fermentation takes place in Oregon pine vats, giving the wort a distinctive aroma. True to its tradition, Bunnahabhain does not practice any chill filtration on its Single Malts, ensuring an authentic and rich aromatic profile. Unlike other Islay whiskies, this distillery offers a unique style: its whiskies are not excessively peated or smoky, emphasizing balance and finesse of flavors.
Toiteach A Dhà, whose Scottish Gaelic translation is "Two Fires," is an emblematic expression selected by the Senior Blender, Dr. Kirstie McCallum. This release is the result of a delicate blend of old Bourbon and Sherry casks, carefully matured in coastal warehouses bathed by Bunnahabhain Bay. The result is a version intensely more peated and smoky than the classic editions, offering whisky lovers a powerful and refined sensory experience.
