Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is now established as one of the most prestigious independent bottlers of Scottish whiskies.
The Caol Ila distillery is ideally located on the iconic island of Islay, in Scotland. Recognized as the largest Single Malt distillery on the island in terms of production capacity, Caol Ila was founded in 1846 near Port Askaig and is now part of the Diageo group. A large part of its production is used in the creation of famous blends, notably Johnnie Walker, which gives it international renown. To meet growing demand, the old distillery was completely rebuilt in 1974, giving way to a modern, more efficient site. From 2010 onwards, the annual production capacity increased from 3.5 to 6.5 million liters, strengthening Caol Ila's leading position in the Scottish whisky industry.
For many years, Caol Ila Single Malts were only available through independent bottlings until 2002 when the Caol Ila 12-year-old was officially launched. The barley used is malted at Port Ellen, and the stills, much larger than those of other Islay distilleries, are only half-filled to optimize the interaction between alcohol vapor and copper. This unique process explains why Caol Ila whiskies have a less peaty profile than other Malts from the island, while offering a distinctive and appealing smoky subtlety. Additionally, the distillery occasionally produces some non-peated editions to diversify its range.
